Zucchini Bread

Did anyone else plant zucchini this summer? Mine are bountiful. Try adding raisins or dried cranberries, just to keep it interesting. Happy cooking!

I have zucchini in my back yard, and boy are they producing!  Here is a basic recipe for homemade zucchini bread.

3 cups all purpose flour                 1 cup oil

2 tsp. cinnamon                           2 cups sugar

1 tsp salt                                    3 eggs 

1 tsp baking soda                        1 Tble vanilla

1/2 tsp baking powder                 3 cups shredded zucchini

1/2 cup chopped walnuts (optional)

Pre heat oven to 350*. Mix all the dry ingredients in a bowl and set aside. Then, in anothe bowl mix the wet ingredients.  Combine the dry into the wet. Mix well.  Fold in the nuts, if using.

Bake in small loaves, big loaves, muffins- any size will work.  Regular muffin size take about 25 minutes to bake up, large loaves will take up to an hour.  Test the bread with a toothpick in the center. If it comes out clean, they are done.

These are great to give as gifts or you can always freeze them if you have too many!
