Recipe: Cappuccino Muffins

When the snow is coming down, I love to bake. This is what I made this morning...invite some friends over or send the muffins out to be enjoyed by neighbors shoveling.

Make a pot of coffee and sit and enjoy these wonderful muffins. They are the perfect thing to bake when the weather is very "wintery". You can double the recipe if you are having many people over or going to a large meeting. Happy Cooking!

 

Cappuccino Muffins                                            Yield: 15 muffins

2 cups flour                                         Topping:

½ cup sugar                                                  6 Tble flour

½ cup packed brown sugar                           ¼ cup packed brown sugar

2 tsp baking powder                                     ½ tsp ground cinnamon

1 Tble instant coffee granules                       ¼ cup cold butter, diced

1 tsp ground cinnamon                                

¼ tsp salt

1 egg

1 cup milk

½ cup butter, melted

1 tsp vanilla extract

1 cup mini chocolate chips

 

1.)    In a large mixing bowl, combine the flour, sugars, baking powder, coffee granules, cinnamon, and salt.  Whisk the egg, milk, melted butter and vanilla together.  Pour the wet ingredients into the dry ingredients.  Mix until just combined.  Fold in the chocolate chips.  Portion the batter into muffin pans.

2.)    To make the topping, combine the ingredients in a small bowl.  Cut in the butter until it looks like wet sand and is crumbly. Sprinkle over the muffin batter.

3.)    Bake at 375* for 25 minutes, or until a toothpick comes out clean.  If you make smaller muffins, they will bake quicker! This recipe makes 12 regular size muffins.

If you have extra topping, simply freeze it for another time. It is great on all kinds of muffins or crisps.
