Pecan Butter Balls

Cold, windy and snowy day? What can we do? Bake cookies!!! Pop them in the oven and put on the kettle-maybe have a neighbor over to have a chat with...or just a good book.

I have baked all day, so now I have a cookie and a cup of tea.  Guess what I am eating?  You guessed it, a pecan butter ball! Simple and delicious!  Here is the recipe so you can also enjoy this treat. Happy baking on this cold and windy day.

Pecan Butter Balls                                 Yield: 50 cookies

2 cups finely chopped pecans

2 cups flour

½ cup sugar

¼ tsp salt

1 cup unsalted butter, melted

2 tsp vanilla

Powdered sugar for dredging

1.)    In a large bowl, combine the pecans, flour, sugar, and salt.  Mix well.

2.)    Stir in the melted butter, and vanilla. Mix until you get a crumbly dough.

3.)    Scoop out 1 inch balls and place them on a cookie sheet about an inch apart.  Pre heat the oven to 325* while making the balls.

4.)    Bake the cookies until just beginning to brown on top, about 17 minutes.

5.)    While the cookies are still warm, dredge them in powdered sugar or sprinkle them heavily with powdered sugar.  Let cool, than store in an air tight container for up to one week.

 

I do not recommend wearing black as you try to sneak these out of the container!

Otherwise how could youRead More condone a guy that has singlehandedly contributed in the skyrocketing of property taxes, the closing of local businesses in favor of corporate big boxes that make no promise to hire residents, and crime rates through the roof? The village has gone from the family friendly "village of churches" to a concrete jungle that gouges lifelong residents that can't even keep their windows open at night anymore. Wake up.
