Apple Muffins
Happy birthday to Johnny Appleseed. What better way to celebrate than making and eating apple muffins!! Chunks of apples and a crispy topping- who could ask fo rmore? Happy baking everyone.
This is a perfect fall treat! The topping makes more than you will need, just freeze it and it will be waiting for the next batch or a different muffin. Happy cooking!
Apple Muffins Yield: 1 dozen muffins or 2 big loaves

2 cups sugar Topping:
4 cups flour ¾ cup flour

2 tsp. baking soda ¾ cup sugar
¼ cup buttermilk 1 Tble cinnamon
4 eggs ¼ lb. (1 stick) margarine or butter
2 tsp. vanilla
2 sticks of margarine or butter, melted
3 Granny Smith apples
1.) In a large bowl, mix together sugar, flour, and baking soda. Set aside.
2.) In a separate bowl, cut up the apples and set aside. In a measuring cup pour the buttermilk and add in the eggs and vanilla. Beat together well.
3.) Mix the wet ingredients into the dry ingredients. Mix well. Fold in the apples.
4.) Portion out into muffin tins. They can be lined with paper or just sprayed. Top with topping. Bake at 350* for 20-25 minutes, or until tested with a toothpick that comes out clean.
