In this Monday's , we spoke with restaurant owners Bill Mulchrone and Potito Conza, two men who've brought a little bit of Italy to Evergreen Park. In its 7 months in the village, Cavatappi didn't exactly open in the best economic climate. We asked them how they've managed to make it work in their favor. We also asked Conza, who's been in the United States for 18 months, how different his American kitchen is from his Italian kitchen.
